This is my favorite breakfast. It's pretty big, so you may want to cut it in half or split it with a friend. Or if you're really hungry, eat the whole thing and you'll be full for hours!
Omelet (7-9 pointsplus for the entire omelet with all the ingredients; 3-4 without ham and cheese)
1 egg (2 pts)
3 egg white (1 pt)
splash of milk (maybe 1 pt)
3-4 slices of deli ham (2 pts for the Hormel Natural Choice honey Deli Ham at Walmart)
1 & 1/2 - 2 slices swiss cheese (3 pts for the Great Value Sliced Swiss at Walmart)
1/2 bell pepper, diced* (0 pts)
1/2 tomato, diced (0 pts)
chopped spinach* (0 pts)
chopped onion* (0 pts)
Oregano, dash (0 pts)
salt & pepper (0 pts)
* Items are available prepared and chopped in the frozen section; keeps well, makes prep faster
Put egg and egg whites in a mixing bowl and scramble with a fork. You can add a splash of milk or water. Add salt and cracked pepper and some oregano. Mix well. Add spinach. Pour onto a hot fry pan (use cooking spray if it's not non-stick). Let the bottom of it set while you add the rest of the ingredients in the middle. Cover and cook on med heat till it's no longer runny inside. Fold over onto itself and flip. Serve warm.
