I just tried using Sun Crystals instead of sugar tonight in the pumpkin muffins I made for dinner. First of all, the pumpkin muffins are SO good they are almost a dessert. So I knew I would want to eat more than just one. I've been leery of trying the Sun Crystals instead of sugar because things often have that weird, almost too sweet taste and feeling in my mouth when it's any of the low calorie sugar substitutes. Sun Crystals are an all natural sweetener with 1/2 the calories of sugar. It's a blend of stevia and pure sugar cane. You use 1/2 the amount that's called for when replacing the sugar in a recipe. And the number of points my 1/2 C of Sun Crystals contributed to the pumpkin muffins was 0! Yeah!!! 1 c of sugar would've added 22 points. Making my muffins 4 points instead of 3. One more point for one muffin may not seem a lot to some of you, but when I want to be able to eat 3 (or maybe even 4 if I have enough points left), that adds up. I bought the bag of Sun Crystals at Walmart. It's on the top shelf above the brown sugar. It's a green bag. I can't remember how much it was. I'm sure it was a lot more than sugar, but it's worth it at times, right? :)
